Recipe: Rice Salad with leftover ingredients! Healthy and delish :)
Rice Salad
This is a great recipe I have concocted over the years.
The ingredients are all left over stuff; whatever that was in the fridge!
I had some rice left from last night in the rice cooker.
I had some lightly boiled broccoli leftover from last night's dinner.
I even put the stem of broccoli! Just peel it well, lightly boil it and then cut into small pieces :)
Half of an orange pepper (paprika) left in the fridge.
A whole bunch of herbs like basil, coriander and parsley as I always have in the fridge. (minus the mint...I ran out of mint!)
Green onions...something I always have in the fridge.
You can go ahead and pretty much put in whatever you have in the fridge!
Toss 'em all together with a dash of white wine vinegar (wanted lemon juice but ran out of lemons)
Lots of olive oil.
Sprinkle of sea salt and black pepper, and...
voila!
Since it's a salad and the rice can take up some time to really absorb the flavour, I prepared this dish just before preparing the rest of the supper. Just left it on the counter with a wrap cover.
(Didn't want to place it in the fridge and have it too cold to eat)
Super easy, super delicious and super economical :)
